Basic Muffins

An article in the April 1941 Woman’s Home Companion taught homemakers two methods for making muffins and how to vary them with whatever they had on hand. This recipe uses the muffin method, in which the dry ingredients are combined in a bowl and the liquid ingredients are stirred in just until the flour has been moistened. It produces heartier muffins with a coarser texture than those made with the cake method.

2 cups unsifted all-purpose flour

2 tablespoons sugar

4 teaspoons baking powder

½ teaspoon salt

1 cup milk

1 large egg, lightly beaten

¼ cup melted vegetable shortening or vegetable oil

1/3 cup optional stir-in such as dark seedless raisins, chopped dates, chopped nuts, chopped candied cherries or pineapple, sautéed onion, or corn kernels
